4 Carb Breakfast or Lunch

4 Carb Breakfast or Lunch

Sometimes the simple things are just as good as a complex recipe. Here's a great 4 carb meal that you have have for either breakfast or lunch that's filling and tasty. All of the flavors complement one another and we think that the fresh sliced avocado go great with the scrambled eggs bit for bite!

Ingredients

  • 8 eggs
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp whipping cream
  • 2/3 avocado, sliced
  • 8 slices bacon
  • 2 tbsp butter
  • salt and pepper, to taste

Instructions

  1. Halve an avocado, remote the pit and skin and cut into slices as pictured
  2. Cook the bacon in a saucepan
  3. While that's cooking, scramble the eggs with the shredded cheese and chopped green onion in a medium bowl
  4. melt 3 tbsp pure butter in a skillet, add the eggs, chopping and stirring for scrambled eggs
  5. Pat the bacon dry and server everything on a plate as pictured. Enjoy!

Notes

You can add 1 stalk sliced green onion if you'd like for flavor, green onions add 1 carb per stalk to a recipe (0.5 per person if you're cooking for 2).
