Chorizo Poblano Cauliflower "Mac 'n Cheese"
This recipe is a little bit of work - but the payoff is there! This is one of the most unbelievable cheesy dishes, so rich and delightful. This is a Saturday night "I want something really, REALLY good" dish. The thing about cauliflower is that i takes on the flavor of whatever dish it's in. It sure stinks when you steam it in the microwave, but once you get it in the cheesy mixture all of that goes away. This is the dish you make for people that don't like vegetables or don't like cauliflower, and they will go away from the dinner table with a big smile and an "OMG" on their face for sure.
Ingredients
- 8 oz. chorizo (med or hot)
- 1 oz. cream cheese
- 1/3 cup whipping cream
- 2 tbsp water
- 1/2 cup water
- 1/2 head cauliflower
- 1/8 tsp salt
- 1/8 tsp pepper
- 1/8 tsp onion powder
- 1/8 tsp garlic powder
- 1/8 tsp paprika
- 1/2 cup shredded cheddar cheese
- 1/4 cup pepper jack cheese
- 1 roasted poblano pepper
- 1 roasted jalapeno pepper
Instructions
- Set oven to 425
Clean and de-seed a poblano pepper, then halve it lengthwise. Do the same to a jalapeno pepper (if you like a little spice). Place parchment paper on a cookie sheet and roast the peppers skin side up for 18 minutes at 425. Next cut and clean 1/3 head of cauliflower, place in a microwaveable bowl with 1/2 c. water and microwave for 6-7 minutes until tender. - While the peppers and cauliflower are cooking - cook the chorizo in a sauce pan, drain the fat in the sink with hot water running, lightly rinse if you want to remove a little of the spice. Put the chorizo back in the pan (not on the burner yet), add the cream cheese and whipping cream, spices, and last the shredded cheeses. Set on the stove with the heat off.
- Your cauliflower might be done next, when the microwave goes off just pour the water off in the sink, chop the florets a little and set that bowl aside. Once the peppers are roasted remove them from the oven.
- Set oven to 350
Chop the roasted peppers, add them to the pan with chorizo, spices, cream cheese, and whipping cream - place on a burner on med-high heat stirring until bubbly - then dump in the cauliflower and cook about 2 more minutes. - You can cook this recipe in any oven safe pan, when cooking for two we use a nice heavy stoneware pie pan but any oven safe pan will do. Transfer the mixture from your sauce pan on the stove to your oven safe pan, and back on 350 for 10-12 minutes until bubbly. Serve!
