Cloud Bread Recipe
If you're on a low carb diet, you're a diabetic, or following keto the one thing you know is that you can't have bread! No more Wonder bread for you. There are now (finally) loafs of keto bread in the store which are 1 carb per slice, and that's been a long time coming. There is a pretty quick alternative you can make yourself at home called "cloud bread". It's light and airy and great for a low carb snack, but even better for a sandwich. We've made these for sausage sandwiches (replacement "McMuffins") a few times now. These are good if you have to make food in advance for breakfast or lunch on the go.
Ingredients
- 6 eggs
- 1/4 cup cream cheese
- 2 tbsp cream cheese
- 1/4 tsp cream of tartar
- 1 tbsp grated Parmesan cheese
- 1/8 tsp garlic powder
- pinch of dried oregano, to taste
Instructions
- Set oven to 300 degrees
- Cream cheese should be room temperature, I usually microwave it in a small bowl for 15 seconds
- Crack your eggs and separate the whites and yolks in 2 separate bowls
- Add the cream of tartar and the egg whites to a mixing bowl and mix on high until you get a stiff peak. FYI this can take 4-5 minutes. A stiff peak is when you take the mixing beaters out and it literally pulls the mixture up forming a peak (like whipped topping would). Carefully and gently empty the mixing bowl into another bowl and set aside (because we're going to use the mixer again)
- In the (now) empty mixing bowl mix the egg yolks and the cream cheese. until it's smooth. Remove the mixing bowl from the mixer
- Using a rubber spatula (and not the mixer) gently FOLD the egg white mixture into the egg yolk and cream cheese mixture. Do not overmix or you will lose the volume in the egg whites
- Place parchment paper or a silicone mat on a cookie sheet and using a 1/2 measuring cup empty batter in 8 spots to make circles. The batter will fan out, do your best to not drip and keep them together to make what will bake as circle buns.
- Sprinkle the garlic, oregano, and parmesan cheese over top and bake 25 minutes. Add minutes if needed to make them golden brown.

Notes
Makes 8 "buns" and each one is 0.74 Net Carbs. You can store these in baggies if they are fully cooled and dry, and you freeze and unthaw them as well.
These are great to make lunch or breakfast sandwiches, experiment with meats and cheeses, mayo and mustard, sausage and egg, etc.
