Ground Turkey Asapagus Skillet

Many times I'm just trying to figure out how to use up certain things in the fridge by the next time we have to go to the grocery store. Also I might adjust recipes depending on what we've eaten the last few days (maybe we're sick of something). This type of dish goes great with riced cauliflower in it as a (rice) filler - but we just weren't into that today. I was thinking maybe low carb flour tortillas but we didn't like that either. I thought it would be cool to make some quick "crispy cheese chips" with this, which worked out great (as pictured). You might like to make this with ground beef or another meat, or a different vegetable. Just watch the carbs!

Ingredients

  • 1/2 tsp dried oregano
  • 1/2 tsp paprika
  • 1/2 tsp ground cumin
  • 1 tbsp olive oil
  • 1 tsp onion powder
  • 1/2 tsp garlic powder or garlic flakes
  • 8 oz ground turkey
  • 1/2 green bell pepper
  • 1/4 red onion
  • 1 cup asparagus, chopped
  • 1/2 cup shredded Mexican blend cheese
  • 1 tbsp fresh cilantro, chopped
  • 3 tbsp sour cream
  • 4 oz can tomato sauce

Instructions

  1. Start by chopping up enough asparagus to make 1 cup, and place that in a microwaveable bowl with 1/4 c. water and microwave for 4 minutes.
  2. While the microwave is running, add the olive oil to a skillet, and chop and cook the ground turkey. You can add the chopped bell pepper and onion when you add the turkey. Add the seasonings at any time. Cook until the meat is done, but not dry.
  3. Next add the sour cream and tomato sauce and cook an additional 2 minutes. You can add some chili powder or shots of hot sauce to taste if you like it spicy. Remove from the burner and stir in the cheese, and you're good to go!
