This is one of the best keto low carb cream gravy recips I have tried. This could be adapted in all kinds of ways but this version is more of a beef flavored gravy. This recipe makes several cups of gravy which could be shared for a larger dish (1 cup each = 1.6 net carbs person) or if you don't need that much and split this recipe for 4 people then 1/2 cup each = 0.8 net carbs per person. Pretty impressive for gravy! I did not think I would be able to make a creamy gravy THIS good on a low carb diet that people on Keto could eat as well.

Now to the essential things you need to know. If you spot check carbs in recipes let me explain some things. Xantham gum is what thickens this gravy recipe (think of it like cornstarch). Xantham gum has no carbs. I have read a LOT of Xantham labels and the only ingredient is "Xantham gum". Bob's Red Mill Xantham gum says it has 7 carbs and 7 grams of fiber per tsp making it ZERO net carbs. I have seen other labels saying it's 1 carb or 0 carbs, and one even saying it's 7 carbs with no fiber making it 7 net carbs per tsp. I believe the majority of the labels are right so I'm going to say 1 tsp of Xantham gum has zero carbs.

Next up is broth. What I did was I seared round chunks of top round beef in ghee in a cast iron skillet on the stove, and then slow roasted them in the oven for 2 hours at 160 degrees in tin foil. When I took them out they were med-well (156 degrees or so) but the foil packets were loaded with juice (au jus). So, for this beef gravy I used 1 cup au from the steak and then 1 cup of vegetable broth.

What you really need to do it get in the habit of checking your labels thoroughly. All broths re not the same. Some have more fat, more sodium and even more CARBS! Most chicken broth is 3 carbs per cup but veg broth is only 2 carbs per cup so I used that mixed with 1 cup of the au jus. REMEMBER - you can't just make au jus from a packet because it has FLOUR and will give you almost 5 carbs per cup! This is why I used drippings from the meat for au jus - it has a much better flavor and no filler.

You could easily change this recipe to be chicken broth to make creamy chicken gravy for say a chicken fried steak! These is no milk in what looks like milk gravy for this recipe. The cream comes from the cream cheese (which has a tiny bit of carbs) and the whipping cream (which has no carbs). You can make all kinds of low carb milk sauces and gravies with a base like this - experiment!

Ingredients

  • 1/4 cup whipping cream
  • 1 cups vegetable broth
  • 2 oz cream cheese
  • 1 cup au jus
  • 1/4 tsp onion powder
  • 1 tsp xantham gum
  • 1/4 tsp salt or to taste
  • 1/4 tsp pepper or to taste

Instructions

  1. In advance add the onion powder, Xantham gum, onion powder, and maybe 1/4 tsp salt and 1/4 tsp pepper small food processor. Add maybe 1/4 cup of the au jus or broth and blend on high for 10-15 seconds until smooth
  2. Melt the butter in a sauce pan
  3. Just before it's all melted add the cream cheese and break it up with a whisk
  4. Once the cream cheese is just about melted slowly add in the remaining au jus and broth (should be about 1 3/4 cups) whisking while you add it
  5. Whisk the mixture while it gets hot at med-high heat and once you see the steam rise from it (before it bubbles) you want to take a rubber spatula and scrape the spice and broth mixture from the food processer (whisking it in as you do it)
  6. Keep whisking the mixture frequently as it boils and you'll see it thicken like gravy
  7. Add more salt and pepper or Lawry's seasoned salt or other seasonings to your liking. It's best to add, taste, add, taste so you don't overpower or ruin it by adding too much. This way you can get the taste that your household likes best

I think this is one of the best keto gravies you will ever taste!
