Chocolate Peanut Butter Bombs
There are two things you miss on any diet - candy and food (lol)! Since I am diabetic I have been eating sugar free foods for more than 15 years, but on keto you're not eating sugar as well. The good thing is now there are many different sugar free sweeteners that are natural and taste like real sugar. This was surely not the case when I started making sugar free treats. Years ago all sugar free sweeteners had an aftertaste. I have found the best sweeteners to use for treats like this are a monkfruit / stevia blend.
When we make a batch of these we freeze them and get one out as needed once or twice per week. In between meals just one of these not only taste great, but they keep you full normally for several hours (because of the fat). They give you energy too!
Ingredients
- 3/4 cup unsweetened peanut butter
- 2/3 cup coconut oil
- 1 cup cocoa
- 1/2 cup monkfruit / stevia blend sweetener
- 1/2 tsp pure vanilla
- 1 pinch salt
Instructions
- Using 2 microwaveable bowls, melt the coconut butter in one and the unsweetened peanut butter in the other
- In a medium mixing bowl add the cocoa, and then blend in the coconut oil little by little until smooth
- Blend in the melted peanut butter little by little until smooth with a whisk
- Add and blend in the vanilla
- Add cupcake wrappers to a muffin pan, distribute the mixture amongst 12, usually 2-3 tbsp per cup
- Place the muffin pan in the freezer for 10 minutes and they are ready to eat!
- You can store them in the freezer in a container separated by wax or parchment paper for up to 6 months
