If you are on a low carb or diabetic diet you're not able to eat sweets. And a lot of the sugar free candy out there has ingredients you can't pronounce, that makes you fart and gives you gas. In my opinion, it's unbelievable that you can make something that tastes this good and gives you this much energy, but only has 4 ingredients and takes only 15 minutes to make.

These peanut butter fudge bombs just melt in your mouth reminding you of every Reese's cup you've ever eaten. They keep you full for quite awhile and give you a little zip of energey, all while being just a little more than 1 net carb. We keep a lot of little treats in our freezer drawer in containers, and this is one of the standbys that we always have around.

The more that you make things like this, the more you will understand how to make keto and low carb snacks of your own simply and quicly by swapping out ingredients. It's so easy to use melted coconut oil, coca, and sugar free sweetener as a base for making almost any chocolate keto sweet treat. Experiment, just watch the carbs!

Ingredients

  • 1 cup unsweetened peanut butter (creamy)
  • 2/3 cup melted coconut oil
  • 6 tbsp cocoa powder
  • 5 tbsp Swerve confectioners sugar free sweetener

Instructions

  1. Melt the coconut oil in the microwave (usually 45-55 seconds)
  2. Microwave the unsweetened peanut butter until melted (not bubbly)
  3. In a mixing bowl add the cocoa powder and sugar free sweetener, and slowly add the melted coconut oil a little at a time while whisking the mixture smooth
  4. When the melted coconut oil is all whisked in, begin adding in and whisking smooth the melted peanut butter the same way
  5. Keep whisking until the mixture is smooth and doesn't feel gritty at the bottom of the bowl anymore
  6. Pour the mixture into your containers (see notes below) just enough to make the shape of peanut butter cups. This recipe makes 16 portions, so you're either making 4 big peanut butter cups and cutting them in 1/4's or maybe you have silicone molds to make something smaller. In the end you should have 16 portions.
  7. Once you've distributed the mixture to your containers, freeze in a container for up to 6 months. This way you can enjoy them as you should (as a now and again snack between meals)

Notes

If you don't have or can't find Swerve sugar free confectioners sweetener, you can always use monkfruit and stevia blend as a substitute.

You will need either some type of silicone candy mold, or some ramekins, or custard bowls - basically small containers you can pour the mixture in to make the shape of peanut butter cups.
